VEGETABLE BRIYANI - How to cook Veg. Briyani

Ingredients:

  • Rice - 1 cup (Soaked for atleast 20mins)
  • Onion - 1 thinly sliced
  • Tomato - 2 Chopped
  • Green chilly - 2 
  • Coriander - a handful
  • Mint leaves - a handful
  • Ginger garlic paste - 1 tablespoon
  • Carrot(big) - 1 chopped
  • Beans - 6 chopped
  • Green peas - 6
  • Curd - 2 tablespoon
  • Oil - 2 tablespoon
  • Ghee - 2 tablespoon
  • Water - 1.4 cup
  • Lime juice - As needed

Spices:

  • Bayleaf - 1
  • Cinnamon - a small stick
  • Cloves - 3 nos.
  • Cardamom - 2 nos.
  • Staranise - 1
  • Shahi jeera - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Red chilly powder - 3 teaspoon
  • Coriander powder - 1 tablespoon
  • Garam masala  - 1 teaspoon
  • Salt - As needed


Method:

  1. First, to prepare the rice, soak them for atleast 20 minutes.
  2. Add Oil+Ghee in a Pressure cooker.
  3. Then, add the whole spices Cinnamon, Cloves, Cardamom, Star anise, Shahi jeera and Bayleaf.
  4. After a minute, put the sliced onions and fry them till they turn transluscent.
  5. Add Ginger-garlic paste and sautè them till the raw smell goes off.
  6. Now, add the chopped tomatoes and fry them till they turn into mushy.
  7. Add all the chopped vegetables and cook them for 5 minutes.
  8. Mix all the spice powders in the curd, whisk them well and add it into the cooker.
  9. Sautè them, for about 5 minutes and add the water and chopped Coriander and Mint leaves.
  10. When the water begins to boil, add the soaked rice.
  11. Check for salt and sourness, if needed add lime juice.
  12. Close the lid, and pressure cook it for about 1 whistle, on a medium flame.
  13. Turn off the stove, and wait till the pressure goes down. 
  14. After that, open the lid and mix up using fork.
