Ingredients:
- Curd - 1 cup
- Red chilli powder - To sprinkle
- Chat masala - To sprinkle
- Gram flour/Besan - 1 cup
- Rice flour - 1/4 cup
- Salt - As needed
- Asafoetida/Hing - 1 teaspoon
- Red Chilli powder - 2 teaspoon
- Baking soda - 1/2 teaspoon
- Cooking oil - For frying
- Water
Method:
- First, to make the Boondi, prepare the batter by mixing Gram flour, Rice flour, Red chilli powder, Asafoetida, Baking soda and Salt.
- The batter should be lump free and thick like a dosa batter.
- Heat the oil in a pan for frying.
- Hold the perforated spoon, a little above the pan and pour 2-3 spoons over it.
- Tap the edges, so all droplets will fall and repeat the process.
- Stir them using a spatula and fry in a medium flame until the Boondis become bright yellow and crisp.
- Take them using a perforated spoon and drain the oil in a kitchen napkin.
- For Raita, Soak the prepared Boondis in a hot water for 5 minutes.
- Whisk the curd, and add the Boondi.
- Sprinkle some Red chilli powder and Chat masala.
