BOONDI RAITA - How to make Boondi Raita

Ingredients:
  • Curd - 1 cup
  • Red chilli powder - To sprinkle
  • Chat masala - To sprinkle
To prepare Boondi:
  • Gram flour/Besan - 1 cup
  • Rice flour - 1/4 cup
  • Salt - As needed
  • Asafoetida/Hing - 1 teaspoon
  • Red Chilli powder - 2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Cooking oil - For frying
  • Water


Method:

  1. First, to make the Boondi, prepare the batter by mixing Gram flour, Rice flour, Red chilli powder, Asafoetida, Baking soda and Salt.
  2. The batter should be lump free and thick like a dosa batter.
  3. Heat the oil in a pan for frying.
  4. Hold the perforated spoon, a little above the pan and pour 2-3 spoons over it.
  5. Tap the edges, so all droplets will fall and repeat the process.
  6. Stir them using a spatula and fry in a medium flame until the Boondis become bright yellow and crisp.
  7. Take them using a perforated spoon and drain the oil in a kitchen napkin.
  8. For Raita, Soak the prepared Boondis in a hot water for 5 minutes.
  9. Whisk the curd, and add the Boondi.
  10. Sprinkle some Red chilli powder and Chat masala.
